Chipotle Chicken
Who doesn’t love a good Chipotle marinade? While chicken is suggested, shrimp or a lean steak would be other good protein options. Pair with the Margarita Chicken Salad or Citrus Black Bean Salsa.

Makes 6 servings.
Ingredients
- 1, 7 oz can chipotle peppers in adobo
- 3 garlic cloves, minced
- Juice of 2 limes
- 2 tablespoons honey or agave syrup
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ cup extra-virgin olive oil
- 3-5 lb chicken breast or thighs
Directions
- Finely chop 3-4 chipotle peppers. To reduce spice, split the peppers open and remove the seeds. Add peppers and 3-4 Tbsp of adobo sauce to a ziplock bag.
- Add the remaining ingredients to the bag. Use a food processor to save time chopping. Marinade a lean protein (chicken, shrimp, or lean steak) for 2 hours or overnight.
