Green Chile Turkey Chili

This Green Chile Turkey Chili is a satisfying way to curb your hunger any night of the week. Representing the flavors of the Southwest, green chiles are a great way to add a tasty and herby flavor to the chili. Each bowl is packed with protein from the combination of turkey and white beans.

Makes 6 servings

    Ingredients
    • 2 Tbsp avocado or canola oil
    • 2 lbs. ground turkey 
    • 1 lb turkey sausage, sliced
    • 1 yellow onion, diced
    • 1 green bell pepper, diced
    • 1 red bell pepper, diced
    • 4 garlic cloves, minced
    • 1 jalapeno, finely diced
    • ½ tsp salt
    • 1 tsp cumin
    • 1 tsp oregano
    • 24 oz salsa verde 
    • 4 oz can diced green chiles
    • 1, 15.5 oz can white beans, drained
    • 1, 12 oz bag frozen corn
    • 2 cups low sodium chicken broth
    Toppings
    • 2 cups Greek Yogurt
    • 1 lime
    • 2 Avocados
    • 8 oz bag shredded Monterey Jack Cheese
    Directions
    1. Top with cheese, avocado and/or lime crema. 
    2. Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add ground turkey and cook until turkey loses its pink color, about 5 minutes. Transfer turkey and any juices to a bowl and return pot to heat. 
    3. Heat remaining 1 tablespoon oil over medium heat and sauté onion, garlic, bell peppers, and jalapeño, stirring often, until tender and starting to brown, 4-5 minutes. Stir in spices. 
    4. Return turkey to pot and add sliced turkey sausage, salsa verde, canned chiles, and broth. Reduce heat, simmer and cook gently, uncovered, for 45 minutes. Stir in beans, corn, and simmer gently for 20 minutes. 
    5. Make lime crema by combining Greek yogurt and juice from 1 lime.
