Crockpot Southwest Chicken
This is the meal you make when you want dinner handled before calls hit. Crockpot Southwest Chicken delivers tons of protein with just enough flavor to keep everyone happy. Serve it in bowls, wraps, or straight out of the container between calls.

Ingredients
- 2-3 lb chicken breast or thighs (4 large chicken breasts)
- 2, 14.5 oz can diced tomatoes with mild green chilies
- 2, 15-oz can of black beans, rinsed and drained
- 20 oz frozen corn
- 2 tsp garlic powder
- 2 tsp cumin
- 2 tsp chili powder
- 1 bunch cilantro, chopped
Directions
- Dump all the ingredients (except the cilantro) into a crockpot.
- Cook on low for 8 hours or high for 4-5 hours. Add cilantro and serve on whole-grain tortillas or cilantro lime rice.
