Pomegranate Goat Cheese Salad

If you enjoyed the strawberry spinach salad in the summer, you will love the winter version! This salad features a bed of mixed greens topped with sliced apples, creamy goat cheese crumbles, and sweet pomegranate seeds. Apples and pomegranate arils are packed with fiber, helping you stay full for the rest of your shift.

Makes 6 servings

Ingredients
  • 16 oz baby spinach and arugula mix
  • Arils from 1 medium pomegranate (1 cup)
  • 1 apple sliced
  • ½ large red onion, sliced
  • ½ cup walnut halves
  • ¼ cup goat cheese
Directions
  1. Cut open the pomegranate and pull the arils out of the shell. Slice the onion and apples. Combine remaining ingredients and serve with Pomegranate Balsamic Vinaigrette.
