Lemon Blueberry Overnight Oats

Looking for something refreshing during the mid-summer months? Try these tart and sweet overnight oats! Chia seeds and oats pack this dish with fiber to keep you full until lunch. 

Active Prep Time: 15 minutes

Makes 4 servings

    Ingredients
    • 2 cups old-fashioned rolled oats
    • 2 cups fresh or frozen blueberries
    • 2 lemons, juiced
    • 4 tablespoons chia seeds
    • 4, 5.3 oz cup lemon Greek yogurt (low sugar, ex. Light and Fit)
    • 2 cups milk of choice
    • Vanilla protein powder (optional)
    Directions
    1. Combine ingredients in a medium bowl. Divide into 4, one-cup servings. Enjoy for the week!

    • 350 calories, 16 g protein, 57 g carbohydrate, 8 g fat, 8 g fiber (using skim milk)
    Notes
    • Blend vanilla protein powder in the milk before adding it to the oats to boost protein if desired.
