Jerk Chicken Wrap

Did you love the Jerk Chicken with Coconut Beans and Rice? Use the leftover chicken for next shift’s lunch. To save time, buy a prepared pineapple or mango salsa.

Active Prep Time: 20 minutes

Makes 6 wraps

    Ingredients
    • 24 oz cooked chicken thighs (see Jerk Chicken Thighs recipe)
    • 6 Tbsp honey mustard
    • 6 romaine lettuce leaves
    • ¾ cup pineapple salsa (see Caribbean Salsa recipe)
    • 1 red onion, sliced
    • 6 whole grain wraps
    Directions
    1. Lay 1 leaf of romaine lettuce on a whole grain wrap, spread 1 Tbsp of honey mustard over the leaf. This prevents the wrap from getting soggy. 
    2. Add 4 oz chicken per wrap, 2 Tbsp salsa, and a few slices red onion. Roll up the wrap and enjoy!
