Hot Honey Taco Bowls

 

This easy taco bowl is built for meal prep and long workdays. Each serving includes beef, beans, vegetables, sweet potatoes, avocado, and a creamy topping. The hot honey gives it just enough kick without making it too spicy.

Ingredients

  • 3 lb 93% lean lean ground beef
  • 2 packets low sodium taco seasoning
  • 1, 15 oz can black beans, rinsed
  • 1 bag frozen edamame, shelled
  • 1 onion, diced
  • 1 bell pepper, diced
  • 6 sweet potatoes, diced
  • 3 avocados, halved
  • 1, 32 oz container full fat yogurt or cottage cheese
  • 1 bottle hot honey

Directions

  • Heat oven to 425°F.
  • Toss the diced sweet potatoes with olive oil, salt, pepper, and one packet of taco seasoning. Spread them on a sheet pan and roast for 25 to 35 minutes, flipping halfway through.
  • Add the onion and bell pepper to a large skillet. Cook for 4 to 5 minutes.
  • Add the ground beef and cook until fully browned. Drain excess grease if needed.
  • Stir in the second taco seasoning packet and the amount of water listed on the package.
  • Add the black beans and frozen edamame directly to the skillet. Cover and cook for 5 minutes, stirring occasionally, until the edamame is heated through.
  • Divide the roasted sweet potatoes and beef mixture between six bowls.
  • Top each bowl with half an avocado and a drizzle of hot honey.

  • 1 c roasted sweet potato + 1 ½ cup beef mix + ½ avocado + 2 Tbsp hot honey + ¼ c yogurt: 980 calories, 65 g protein, 105 g carbohydrate, 36 g fat, 19 g fiber

  • Use whatever ground meat is on sale (ex. Chicken, turkey, bison, venison)
