Honey Goat Cheese Sweet Potatoes

This delicious recipe combines creamy honey goat cheese with roasted sweet potatoes for a perfect sweet and savory dish.

Makes 6 servings

Ingredients
  • 3 lb bag of sweet potatoes
  • 2 Tbsp honey
  • 2 Tbsp olive oil
  • ¼ cup goat cheese (1 small log)
  • ½ cup reduced sugar, dried cranberries
  • Optional: fresh or dried parsley, flakey salt
Directions
  1. Preheat oven to 400°F.
  2. Chop sweet potatoes into small, bite-sized pieces and spread out on a baking sheet. 
  3. Drizzle honey and olive oil over the top and mix well.
  4. Bake for 20-35 minutes or until tender.
  5. Add goat cheese and dried cranberries. Mix and serve.
