Gochujang Crockpot Chicken

This sweet and slightly spicy chicken is easy to throw together earlier in the shift, then set and forget until dinner. Gochujang is a sweet, spicy, fermented red chili paste popular in Korean cooking. If your shift is picky, don’t worry; it’s not too spicy. Consider sriracha on the side for those who love spice.

 

Active Prep Time: 15 minutes

Makes 6-10 servings

Ingredients
  • 3-5 lb boneless, skinless chicken breast or thighs
  • ¼ c gochujang
  • 2 Tbsp rice vinegar
  • ½ c soy sauce
  • ⅓ c light brown sugar
  • 1 Tbsp sesame oil 
  • 1 Tbsp corn starch
Directions
  1. Place the chicken in the crockpot.
  2. Whisk the remaining ingredients (except the cornstarch) in a small bowl and pour over the chicken.
  3. Cook on low for 8 hours or high for 4-5 hours.
  4. Take ½ cup of liquid from the crockpot and whisk with the cornstarch in the liquid. Add it back into the crockpot. Mix in while shredding the chicken. Repeat if the liquid is not thick enough.

  • ½ cup: 100 calories, 3g carbs, 6g fat, 17g protein, 0g fiber
Notes
  • Serve with a frozen stir-fry mix and rice.
