Pineapple BBQ Jerk Chicken

This sweet and smoky jerk chicken brings just enough heat without overpowering the crew. The honey BBQ sauce balances the bold jerk seasoning while fresh pineapple adds a juicy, tropical bite. It is a simple, high-protein meal that works great for busy shifts or easy meal prep.

Ingredients

  • 3 lb boneless skinless chicken thighs
  • 2 Tbsp premade mild jerk seasoning (ex. Walkerswood)
  • ⅓ cup honey BBQ sauce
  • 1 cup pineapple
  • ⅓ cup cilantro leaves

Directions

  • Combine seasoning, BBQ sauce, pineapple, and cilantro in a blender and puree.
  • Marinate chicken for 1-2 hours prior to grilling or baking. 
    • Do not marinate overnight, or it may cause a gritty texture.
