Veggie Salad for Chicken Shawarma

This veggie salad pairs with the Chicken Shawarma marinade and pita bread for a complete meal packed with fiber, antioxidants, and satisfying crunch.

Ingredients

  • 1.5 cans chickpeas, rinsed and drained
  • 2 cups English cucumbers, diced
  • 2 cups Roma tomatoes, diced
  • 1 cup shredded cabbage or coleslaw veggies
  • 1 cup low-fat Greek yogurt
  • 1 Tbsp olive oil
  • 1 Tbsp garlic paste
  • 1 tsp salt
  • 1 lemon, juiced

Directions

  1. Combine the Greek yogurt, olive oil, garlic paste, salt, and lemon juice in a large bowl.
  2. Add vegetables and chickpeas; toss to coat. Serve with pita and Chicken Shawarma.
