Sweet Chili Turkey Bowls
This is a sweet-savory, one-pan-style bowl that delivers protein, carbs, and veggies without being a time suck.
Ingredients
- 3 cups dry jasmine rice
- 3¾ cups water
- 2 (12 oz) bags green beans
- 2 lb lean ground turkey
- 2 limes, juiced
- ¾ cup sweet Thai chili sauce
- ¼ cup low-sodium soy sauce
- ¼ cup water
- Cilantro, chopped
- Crispy fried onions (optional topping)
Directions
- Boil 3¾ cups water, add jasmine rice with salt, cover and simmer 15–18 minutes until tender. Keep covered until ready to serve.
- Wash and trim green beans into 2-inch pieces. Juice limes and chop cilantro.
- Heat a large skillet over medium-high with oil. Add turkey, season with salt and pepper, cook 6–8 minutes until browned through, draining excess liquid if needed.
- Add green beans and ¼ cup water to skillet, cover and cook 3–5 minutes until bright green and tender.
- Stir in sweet Thai chili sauce, soy sauce, and lime juice. Cook 1–2 minutes until coated and sticky. Top with cilantro and optional fried onions. Serve over rice.
