Southwest Egg Bake

This Southwest Egg Bake is what you need for a protein-packed meal any time of day. Lean turkey, eggs, veggies, and cheese come together in one pan and reheat quickly all shift long.

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 1 lb lean ground turkey
  • 1 Tbsp chili powder
  • 1 Tbsp paprika
  • ¼ tsp cayenne pepper
  • ½ tsp oregano
  • ½ tsp cumin
  • 1 Tbsp red wine vinegar
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 red onion, diced
  • 12 large eggs
  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)
  • ⅓ cup milk
  • ½ tsp salt
  • 1½ cups shredded Mexican blend cheese
  • 1 bunch cilantro, chopped

Directions

  1. Preheat oven to 400°F.
  2. Sauté turkey in olive oil until cooked through. Drain excess fat, season with spices and vinegar, and set aside.
  3. In the same pan, sauté bell peppers and onion until cooked through.
  4. In a large bowl, whisk together eggs, Rotel, milk, salt, cheese, and cilantro.
  5. Combine egg mixture, turkey, and peppers; pour into a greased 9x13 pan and bake 20–25 minutes until set.

Serving Suggestions

Serve with avocado, salsa, or hot sauce. Great for meal prep — reheat individual portions throughout the shift.
