Southwest Egg Bake
This Southwest Egg Bake is what you need for a protein-packed meal any time of day. Lean turkey, eggs, veggies, and cheese come together in one pan and reheat quickly all shift long.
Ingredients
- 1 Tbsp extra virgin olive oil
- 1 lb lean ground turkey
- 1 Tbsp chili powder
- 1 Tbsp paprika
- ¼ tsp cayenne pepper
- ½ tsp oregano
- ½ tsp cumin
- 1 Tbsp red wine vinegar
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 1 red onion, diced
- 12 large eggs
- 1 (10 oz) can Rotel (diced tomatoes with green chiles)
- ⅓ cup milk
- ½ tsp salt
- 1½ cups shredded Mexican blend cheese
- 1 bunch cilantro, chopped
Directions
- Preheat oven to 400°F.
- Sauté turkey in olive oil until cooked through. Drain excess fat, season with spices and vinegar, and set aside.
- In the same pan, sauté bell peppers and onion until cooked through.
- In a large bowl, whisk together eggs, Rotel, milk, salt, cheese, and cilantro.
- Combine egg mixture, turkey, and peppers; pour into a greased 9x13 pan and bake 20–25 minutes until set.
