Pomegranate Vinaigrette

This pomegranate vinaigrette is a vibrant and tangy dressing that brings a burst of flavor to salads, roasted vegetables, and even grilled meats.

Ingredients

  • ¾ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • ¼ cup pomegranate juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • ½ tsp salt
  • ½ tsp black pepper

Directions

  1. Combine all ingredients in a jar or bowl, shake or whisk well, and serve over Pomegranate Goat Cheese Salad.
