Pomegranate Goat Cheese Salad

If you enjoyed the strawberry spinach salad in the summer, you will love the winter version! Pomegranate seeds, apple, and goat cheese make this salad a seasonal showstopper.

Ingredients

  • 16 oz baby spinach and arugula mix
  • Arils from 1 medium pomegranate (about 1 cup)
  • 1 apple, sliced
  • ½ large red onion, sliced
  • ½ cup walnut halves
  • ¼ cup goat cheese, crumbled

Directions

  1. Cut open the pomegranate and pull the arils out of the shell. Slice the onion and apples.
  2. Combine all ingredients in a large bowl and serve with Pomegranate Balsamic Vinaigrette.
