Pickled Gochujang Coleslaw

This slaw's got crunch with a kick. Tri-colored cabbage gets a flavor upgrade from garlic, tangy rice vinegar, a touch of brown sugar, and a hit of gochujang. It's sweet, spicy, and slightly pickled — the perfect cool, crisp contrast to savory Korean BBQ tacos.

Ingredients

  • 3 cups tri-colored coleslaw vegetables
  • 3 garlic cloves, crushed
  • ⅓ cup rice vinegar
  • 1 Tbsp brown sugar
  • 1 Tbsp gochujang (Korean chile paste, sub sriracha if needed)

Directions

  1. Combine all ingredients in a medium bowl.
  2. Allow to sit for 30 minutes, then serve with Korean BBQ tacos.
