Peanut Butter Muffins

Craving banana pancakes, but need something more portable? These muffins are not only portable but can crush cravings for sweets with whole grain Kodiak Cakes as the base.

Servings 12 muffins

Ingredients

  • 2 cups Kodiak Cake Pancake mix
  • 1 cup low-fat milk
  • 1 egg
  • 2 large, ripe bananas, mashed
  • ¼ cup pure maple syrup
  • ⅛ tsp salt
  • ½ cup creamy peanut butter

Directions

  1. Preheat oven to 350°F.
  2. Combine all ingredients in a medium bowl. Divide into 12 muffin cups. Bake for 15–20 minutes or until a toothpick inserted comes out clean.

Serving Suggestions

Mix in a scoop of vanilla or chocolate protein powder to increase protein. Store in the refrigerator to maintain freshness.
