Peanut Butter Banana Baked Oatmeal
This recipe is a firefighter-approved fuel-up that tastes like banana bread but packs the staying power of oats, protein, and chia.
Ingredients
- 3 cups old-fashioned rolled oats
- ½ cup vanilla protein powder
- 3 cups low-fat milk
- ⅓ cup peanut butter
- 3 large eggs (or flax eggs)
- 2 bananas, mashed
- 3 Tbsp chia seeds
- 1 tsp vanilla
- ½ tsp salt
Directions
- Preheat oven to 375°F.
- Combine all ingredients in a large mixing bowl and stir until well mixed.
- Spray a 9x13 baking dish with cooking spray. Pour batter into pan.
- Bake for 35–40 minutes or until the center is set. Cool slightly before cutting into 12 squares.
