Loaded Beef Breakfast Hash

This breakfast hash is loaded with seasoned beef, crispy potatoes, eggs, black beans, peppers, and avocado. It is hearty enough to keep you full through a busy morning. Serve it as a bowl or stuff it into a tortilla.

Ingredients

  • 3 lb 93% lean lean ground beef
  • 2 packets low sodium taco seasoning
  • 1, 15 oz can black beans, rinsed
  • 1 bell pepper, diced
  • 3 lb golden potatoes, diced
  • 12 large eggs
  • 3 avocados, halved
  • Optional: mexican cheese

Directions

  • Heat the oven to 425°F.
  • Toss the diced potatoes with a small amount of oil. Spread them on a sheet pan and roast for 25 to 35 minutes, flipping halfway through.
  • Cook the ground beef and diced bell pepper in a large skillet over medium heat until the beef is browned and fully cooked.
  • Drain excess grease if needed. Stir in the taco seasoning and the amount of water listed on the packets.
  • Add the black beans and cook for another 2 to 3 minutes.
  • Cook the eggs in a separate skillet by scrambling or frying them.
  • Divide the roasted potatoes, beef mixture, and eggs between six bowls.
  • Top each bowl with half an avocado.
