Lemon Blueberry Overnight Oats

Looking for something refreshing during the mid-summer months? Try these tart and sweet overnight oats! Chia seeds and oats pack in the fiber to keep you full until lunch.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups fresh or frozen blueberries
  • 2 lemons, juiced
  • 4 tablespoons chia seeds
  • 4 (5.3 oz) cups lemon Greek yogurt (low sugar, e.g. Light and Fit)
  • 2 cups milk of choice
  • Optional: vanilla protein powder

Directions

  1. Combine all ingredients in a medium bowl. Divide into 4 one-cup servings. Refrigerate overnight and enjoy throughout the week!
