Korean BBQ Tacos

These sweet, spicy, and tangy tacos bring bold flavor with firefighter-friendly simplicity, featuring Korean BBQ marinade and served with pickled slaw.

Ingredients

  • 3 lb flank or London broil steak
  • 1 knob fresh ginger, 1 Tbsp minced
  • 1 Tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp gochujang (Korean chile paste, sub sriracha if needed)
  • ¼ cup brown sugar
  • 2 (8 ct) packs whole grain or carb balance wraps

Directions

  1. Marinate the steak as early as possible in the shift. Combine minced ginger, sesame oil, garlic, soy sauce, lime juice, gochujang, and brown sugar with the steak in a gallon Ziploc bag. Marinate for at least 2 hours.
  2. Preheat the grill to medium-high and cook until the steak reaches the desired internal temperature.
  3. Grill tortillas for 30 seconds on each side until lightly browned.
  4. Serve tacos with tortillas and pickled slaw.
