Hot Honey Taco Bowls
This breakfast hash is loaded with seasoned beef, crispy potatoes, eggs, black beans, peppers, and avocado. It is hearty enough to keep you full through a busy morning. Serve it as a bowl or stuff it into a tortilla.
Ingredients
- 3 lb 93% lean lean ground beef
- 2 packets low sodium taco seasoning
- 1, 15 oz can black beans, rinsed
- 1 bag frozen edamame, shelled
- 1 onion, diced
- 1 bell pepper, diced
- 6 sweet potatoes, diced
- 3 avocados, halved
- 1, 32 oz container full fat yogurt or cottage cheese
- 1 bottle hot honey
Directions
- Heat oven to 425°F.
- Toss the diced sweet potatoes with olive oil, salt, pepper, and one packet of taco seasoning. Spread them on a sheet pan and roast for 25 to 35 minutes, flipping halfway through.
- Add the onion and bell pepper to a large skillet. Cook for 4 to 5 minutes.
- Add the ground beef and cook until fully browned. Drain excess grease if needed.
- Stir in the second taco seasoning packet and the amount of water listed on the package.
- Add the black beans and frozen edamame directly to the skillet. Cover and cook for 5 minutes, stirring occasionally, until the edamame is heated through.
- Divide the roasted sweet potatoes and beef mixture between six bowls.
- Top each bowl with half an avocado and a drizzle of hot honey.

Use whatever ground meat is on sale (ex. Chicken, turkey, bison, venison) Double the beef purchase and use half for the Loaded Breakfast Hash for breakfast
