Honey Goat Cheese Sweet Potatoes

This delicious recipe combines creamy honey goat cheese with roasted sweet potatoes for a perfect sweet and savory dish. A crowd-pleaser that doubles as a side or a light meal.

Ingredients

  • 3 lb bag sweet potatoes
  • 2 Tbsp honey
  • 2 Tbsp olive oil
  • ¼ cup goat cheese (1 small log)
  • ½ cup reduced-sugar dried cranberries
  • Optional: fresh or dried parsley, flaky salt

Directions

  1. Preheat oven to 400°F.
  2. Chop sweet potatoes into small, bite-sized pieces and spread on a baking sheet.
  3. Drizzle honey and olive oil over the top and mix well. Bake for 20–35 minutes or until tender.
  4. Remove from oven. Add goat cheese and dried cranberries, mix, and serve.
