Honey Ginger Veggies

Replace boring, bland steamed broccoli with this flavorful Asian-inspired marinade. Toss in whatever veggies you have on hand for an easy, healthy side dish.

Ingredients

  • 1 lb fresh broccoli, chopped
  • 1 bag shredded carrots
  • 3 cloves garlic, minced
  • 1 Tbsp fresh ginger, minced
  • 3 Tbsp low-sodium soy sauce
  • ½ tsp sesame oil
  • 1 Tbsp honey
  • 1 tsp sesame seeds (optional)

Directions

  1. Whisk together garlic, ginger, soy sauce, sesame oil, and honey in a small bowl. Toss veggies in the mixture.
  2. Flat Top: Cook veggies on medium-high heat for 5–10 minutes, or until softened.
  3. Oven: Preheat to 400°F. Spread veggies evenly on a baking sheet. Bake for 10–15 minutes or until softened.

Per ½ cup cooked: 70 calories, 3g protein, 13g carbohydrates, 1g fat, 3g fiber
