Green Chile Turkey Chili
This Green Chile Turkey Chili is a satisfying way to curb your hunger any night of the week. Lean turkey, white beans, and salsa verde come together in one hearty pot.
Ingredients
- 2 Tbsp avocado or canola oil
- 2 lbs ground turkey
- 1 lb turkey sausage, sliced
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 4 garlic cloves, minced
- 1 jalapeño, finely diced
- ½ tsp salt, 1 tsp cumin, 1 tsp oregano
- 24 oz salsa verde
- 4 oz can diced green chiles
- 1, 15.5 oz can white beans, drained
- 1, 12 oz bag frozen corn
- 2 cups low-sodium chicken broth
Directions
- Heat oil in a large pot over medium-high heat. Cook ground turkey until no longer pink, about 5 minutes. Transfer to a bowl.
- Add remaining oil and sauté onion, garlic, peppers, and jalapeño until tender and browning, about 4–5 minutes. Stir in spices.
- Return turkey to pot with sausage, salsa verde, canned chiles, and broth. Simmer uncovered for 45 minutes.
- Stir in beans and corn; simmer for 20 more minutes. Serve with Greek yogurt crema, lime, avocado, and shredded Monterey Jack cheese.
