Green Chile Turkey Chili

This Green Chile Turkey Chili is a satisfying way to curb your hunger any night of the week. Lean turkey, white beans, and salsa verde come together in one hearty pot.

Ingredients

  • 2 Tbsp avocado or canola oil
  • 2 lbs ground turkey
  • 1 lb turkey sausage, sliced
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 4 garlic cloves, minced
  • 1 jalapeño, finely diced
  • ½ tsp salt, 1 tsp cumin, 1 tsp oregano
  • 24 oz salsa verde
  • 4 oz can diced green chiles
  • 1, 15.5 oz can white beans, drained
  • 1, 12 oz bag frozen corn
  • 2 cups low-sodium chicken broth

Directions

  1. Heat oil in a large pot over medium-high heat. Cook ground turkey until no longer pink, about 5 minutes. Transfer to a bowl.
  2. Add remaining oil and sauté onion, garlic, peppers, and jalapeño until tender and browning, about 4–5 minutes. Stir in spices.
  3. Return turkey to pot with sausage, salsa verde, canned chiles, and broth. Simmer uncovered for 45 minutes.
  4. Stir in beans and corn; simmer for 20 more minutes. Serve with Greek yogurt crema, lime, avocado, and shredded Monterey Jack cheese.
