Gochujang Crockpot Chicken
This sweet and slightly spicy chicken is easy to throw together earlier in the shift, then set and forget until dinner. Gochujang is a Korean fermented chili paste that adds bold flavor without excessive heat.
Ingredients
- 3–5 lb boneless, skinless chicken breast or thighs
- ¼ cup gochujang
- 2 Tbsp rice vinegar
- ½ cup soy sauce
- ⅓ cup light brown sugar
- 1 Tbsp sesame oil
- 1 Tbsp cornstarch
Directions
- Place the chicken in the crockpot.
- Whisk together all remaining ingredients except cornstarch and pour over the chicken. Cook on low for 8 hours or high for 4–5 hours.
- Remove ½ cup of liquid and whisk with the cornstarch. Add it back into the crockpot, shredding the chicken while mixing. Repeat if more thickening is needed.
