Fall Harvest Salad

It's finally fall! This salad is the perfect transition from summer to fall and highlights the best fall produce. Frozen sweet potato thaws quickly and saves valuable prep time.

Ingredients

  • 6 cups mixed greens
  • 1 package frozen sweet potato cubes
  • 1 apple, cubed
  • ⅓ cup reduced-sugar dried cranberries
  • ⅓ cup goat cheese, crumbled
  • ⅓ cup pecan halves

Directions

  1. Combine all ingredients in a medium bowl and serve.

Per serving: 150 calories, 5g protein, 22g carbohydrates, 6g fat, 6g fiber

Serving Suggestions

Top with an apple cider vinaigrette (2 Tbsp: 180 calories, 4g carbs, 19g fat). To roast fresh sweet potatoes instead of frozen, cook at 425°F for 20–35 minutes with olive oil, cinnamon, salt, and brown sugar.
