Crockpot Thai Peanut Chicken

This is a no-fuss, easy Thai dish delivering subtle, sweet peanut flavor. The crockpot does all the cooking for you — just dump everything in and come back to a complete meal.

Ingredients

  • 2 red bell peppers, sliced
  • 1 yellow bell pepper, sliced
  • 2 white onions, chopped
  • 3 lb chicken breast
  • ¾ cup chunky peanut butter
  • 1½ Tbsp lime juice
  • ¾ cup chicken broth
  • ⅓ cup soy sauce
  • 3 Tbsp honey
  • ⅓ cup crushed/chopped peanuts
  • ⅓ cup cilantro, chopped (optional)
  • 2½ cups uncooked rice OR 24 oz rice noodles OR 6 large lettuce leaves (to serve)

Directions

  1. Place peppers and onion at the bottom of the crockpot to act as a stand for the chicken.
  2. Place the chicken on top.
  3. Mix together peanut butter, lime juice, chicken broth, soy sauce, and honey. Pour sauce over chicken.
  4. Cook on high for 3–4 hours or low for 6 hours. With 15 minutes remaining, shred chicken with two forks, cover, and continue cooking.
  5. Serve over brown rice, noodles, or in lettuce leaves. Top with peanuts and optional cilantro.

Serving Suggestions
