Crockpot Chicken Chili

Chili is the perfect winter dish, and this version is even better in the crockpot! Chicken breast keeps the dish lean, while the sauce and peppers add all the flavor.

Servings 6 servings

Ingredients

  • 3 lb chicken breast
  • 3 garlic cloves, minced
  • 2 green bell peppers, diced
  • 1 medium onion, diced
  • 3 dried guajillo chiles, chopped
  • 1 Tbsp tomato paste
  • 1½ cups crushed tomatoes
  • ¼ tsp each: chili powder, cumin, cayenne pepper, salt, pepper
  • 1 can pinto beans, rinsed and drained
  • 1 can black beans, rinsed and drained

Directions

  1. Combine all ingredients EXCEPT the beans in a crockpot. Cook on low for 8 hours or high for 5 hours.
  2. Shred the chicken, add the beans, and heat for 30 minutes until warmed through. Serve.

Serving Suggestions

Top with low-fat cheese and light sour cream. Serve with a side salad for a complete meal.
