Citrus Mojo Pork Tenderloin

This citrus-based pork dish features fresh lime, orange, garlic, and cilantro that brings bold flavor without a lot of effort. A lean, high-protein meal that works great for feeding a crew, meal prepping for the week, or recovering after a hard training session.

Ingredients

3 lbs pork tenderloin

10 limes, juiced

2 oranges, juiced

1 bulb garlic, minced

¾ cup olive oil + 2 Tbsp additional

1 bunch cilantro, chopped

1.5 Tbsp ground cumin

½ Tbsp kosher salt

½ teaspoon ground black pepper

Directions

Preheat oven to 400°F.

Combine all marinade ingredients in a large gallon bag. Marinate for a minimum of 2 hours.

Heat 2 Tbsp olive oil in a large oven-safe skillet over medium-high heat.

Sear each side of the pork for 1–2 minutes until lightly browned.

Transfer skillet to oven and roast for 15–20 minutes until internal temperature reaches 145°F.

Remove from oven and let rest 5 minutes before slicing.

Serving Suggestions

Serve with rice, black beans, or a simple salad. Also great sliced in wraps for on-shift meals.
