Cilantro Lime Rice
Cilantro Lime Rice is a simple, flavorful base that turns basic meals into something better. Fresh lime and cilantro add brightness while optional cauliflower rice boosts volume and fiber.
Ingredients
- 3 cups jasmine rice, rinsed
- 3.5 cups water
- 3 Tbsp extra virgin olive oil
- 1½ tsp salt
- Juice from 2 fresh limes
- 1 bunch fresh cilantro, chopped
- 1 bag frozen cauliflower rice (optional)
Directions
- Preheat oven to 375°F. In a deep 9x13-inch baking dish, combine rice, olive oil, and salt, stirring to coat evenly.
- Bring water to a boil, then pour over rice. Cover tightly and bake 30–35 minutes until liquid is absorbed.
- Fluff rice and stir in lime juice and cilantro. If using cauliflower rice, heat per package instructions and mix thoroughly into rice.
