Cilantro Lime Rice

Cilantro Lime Rice is a simple, flavorful base that turns basic meals into something better. Fresh lime and cilantro add brightness while optional cauliflower rice boosts volume and fiber.

Ingredients

  • 3 cups jasmine rice, rinsed
  • 3.5 cups water
  • 3 Tbsp extra virgin olive oil
  • 1½ tsp salt
  • Juice from 2 fresh limes
  • 1 bunch fresh cilantro, chopped
  • 1 bag frozen cauliflower rice (optional)

Directions

  1. Preheat oven to 375°F. In a deep 9x13-inch baking dish, combine rice, olive oil, and salt, stirring to coat evenly.
  2. Bring water to a boil, then pour over rice. Cover tightly and bake 30–35 minutes until liquid is absorbed.
  3. Fluff rice and stir in lime juice and cilantro. If using cauliflower rice, heat per package instructions and mix thoroughly into rice.
