Cilantro Lime Chicken

This delicious marinade comes together quickly and can double as the dressing for the Margarita Salad. Works beautifully with chicken, shrimp, or lean steak.

Ingredients

  • 2 bunches cilantro
  • 3 garlic cloves
  • ¼ cup lime juice
  • 2 tsp honey or agave
  • ½ tsp cumin
  • ½ tsp salt
  • ½ cup extra-virgin olive oil
  • 3–5 lb chicken breast
  • Double the recipe if using for both dressing and marinade

Directions

  1. Combine all ingredients except chicken in a food processor (saves time chopping).
  2. Place chicken in a large ziplock bag, pour marinade over, and marinate for 2 hours or overnight.
  3. Grill or cook chicken as desired. Serve over the Margarita Salad or with rice.
