Chipotle Chicken

Who doesn't love a good Chipotle marinade? While chicken is suggested, shrimp or lean steak work just as well. This bold marinade comes together in minutes and delivers serious flavor.

Ingredients

  • 1, 7 oz can chipotle peppers in adobo
  • 3 garlic cloves, minced
  • Juice of 2 limes
  • 2 tablespoons honey or agave syrup
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ cup extra-virgin olive oil
  • 3–5 lb chicken breast or thighs

Directions

  1. Finely chop 3–4 chipotle peppers. To reduce spice, split the peppers open and remove the seeds. Add peppers and 3–4 Tbsp of adobo sauce to a ziplock bag.
  2. Add the remaining ingredients to the bag. Use a food processor to save time chopping. Marinade a lean protein (chicken, shrimp, or lean steak) for 2 hours or overnight. Grill or cook as desired.

Serving Suggestions

Pairs great with Margarita Salad or Citrus Black Bean Salsa. Use a food processor to blend the marinade ingredients faster.
