Chicken Shawarma

Chicken shawarma is a healthy, filling, and most importantly, delicious recipe originating from Turkey. Typically slow-roasted on a spit, but grilling at the firehouse works perfectly!

Ingredients

  • 3 lb chicken thighs or breast
  • 1 yellow onion, diced
  • 3 Tbsp garlic paste
  • 1 Tbsp turmeric
  • 1 Tbsp cumin
  • 1 Tbsp paprika
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • ⅓ cup low-fat Greek yogurt
  • 1 lemon, juiced
  • 2 Tbsp olive oil

Directions

  1. Prepare the marinade: mix Greek yogurt, garlic paste, cumin, paprika, turmeric, salt, cayenne, and lemon juice together in a ziplock bag. Add chicken and marinate 2 hours or overnight.
  2. Grill the chicken until cooked through. Cut into strips and serve on pita bread with Veggie Salad.

Serving Suggestions
