Bowtie Sausage Pasta
This firehouse favorite packs in big flavor and serious staying power with Italian sausage, whole grain farfalle, and a rich, bean-boosted tomato sauce.
Ingredients
- 2 Tbsp extra virgin olive oil
- 5 garlic cloves, minced
- 1 yellow onion, diced
- 1 can cannellini (navy) beans
- 1 can low-sodium chicken broth
- 1 (28 oz) can crushed tomatoes
- 1 tsp Italian seasoning
- ½ tsp salt
- 1 lb ground Italian sausage (mild or spicy)
- 1 lb whole grain farfalle (bow tie) pasta
- Parmesan cheese and fresh basil (optional)
Directions
- Bring a large pot of water to boil. Add pasta and cook 11–13 minutes or until al dente. Drain and return to pot.
- Over medium heat, sauté garlic and onions in olive oil until the onions are translucent, about 3–4 minutes.
- Drain and rinse the beans. Add to garlic and onions and sauté for 2 minutes.
- Pour chicken broth, tomatoes, Italian seasoning, and salt into a blender. Add the onion and bean mixture; blend until smooth (about 15 seconds). Set aside with lid off.
- Brown the Italian sausage; drain excess grease. Add pasta to the pot with the tomato sauce. Top with parmesan cheese and fresh basil and enjoy!
