Bibimbap

Bibimbap is an Asian dish made of a stir-fry of veggies and meat. For firefighters it's a great high-protein, balanced bowl that feeds the whole crew and comes together faster than takeout.

Ingredients

  • 1 bag of carrots, peeled and sliced thinly
  • 3–4 small zucchini, sliced thinly
  • 1 Tbsp sesame oil
  • 4–6 lb ground turkey (ideally 90/10)
  • 1 Tbsp freshly grated ginger
  • ⅓ cup low-sodium soy sauce
  • ½ Tbsp rice vinegar
  • 2 Tbsp brown sugar
  • 6–9 cups cooked rice
  • Sriracha (optional)

Directions

  1. Thinly slice carrots and zucchini. Heat sesame oil in a wok or large stir-fry pan over medium-high heat. Add carrots and zucchini and cook for 5–8 minutes, mixing regularly.
  2. In a separate pan, cook ground turkey over medium heat until cooked through. Drain excess fat.
  3. Add ginger, soy sauce, rice vinegar, and brown sugar to the turkey and mix thoroughly. Serve with rice and stir-fried veggies.

Serving Suggestions

A mandolin or food processor speeds up chopping significantly. Pre-grated ginger tubes are available at most retailers. Brown rice is recommended for extra fiber.
