BBQ Chicken Ranch Bowls

Ingredients

  • 3 lb boneless, skinless chicken breasts or thighs
  • 3 Tbsp olive oil
  • 1 red onion, diced
  • 3 roma tomatoes, diced
  • 2, 15.5 oz cans black beans
  • 1, 15.5 oz can yellow corn
  • 3 large avocados
  • 6 fresh limes
  • 9 cups brown rice, cooked
  • Light ranch dressing
  • BBQ sauce

Directions

  1. Prepare rice in a large pot; fluff with a fork when done.
  2. Marinate chicken in olive oil and desired seasonings; cook in a heated skillet until done. Set aside.
  3. Heat beans in a small pot. Build each bowl: layer rice, then chicken, then onions, tomatoes, avocado, and corn.
  4. Mix ranch and BBQ sauce to taste. Drizzle over bowl and squeeze fresh lime juice. Garnish with cilantro and tortilla strips if desired.
